How to Use Berber

Meat & Poultry: Sprinkle over chicken, lamb, or beef before grilling, roasting, or pan-frying. Use 1 teaspoon per piece.

Signature Recipe: Berber Chicken with Lentils
Serves 6
Ingredients
- 2–3 tablespoons Berber Spice Mix
- 6 chicken thighs (skin-on)
- 1 cup Indigo, French Green or Beluga Caviar lentils
- 2 cups diced onions
- 1 cup diced carrot
- 1 cup diced tomato
- 5 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 tablespoons olive oil
- 3 cups water
- Salt & pepper
Method
- Preheat oven to 180°C.
- Sauté onions, carrots, garlic, and ginger in olive oil until tender (5–7 minutes).
- Add spice mix and sauté for a further 2–3 minutes.
- Add lentils, tomatoes, salt, and water. Bring to a boil, cover, and simmer on low until al dente (30 minutes).
- Season chicken with salt and pepper. Sear skin-side down in a hot pan until golden and crispy (6–8 minutes each side).
- Serve chicken over the lentils.
