Signature Recipe: Rendang Beef Curry
Serves 4
Ingredients
- 30g The Spice Factory Rendang Curry Spice Mix
- 1kg gravy beef or chuck steak, cut into small pieces
- 1 onion, coarsely chopped
- 4 garlic cloves, coarsely chopped
- 2 red chillies, chopped
- 2 x 400mL cans coconut milk
- 40g desiccated coconut
- 1 stem lemongrass, bruised
- ⅓ cup fresh coriander leaves
Method
- Place beef in a large saucepan and add all ingredients except the coriander leaves. Bring to the boil.
- Reduce heat and simmer for approximately 2 hours, or until the beef is very tender and the sauce has thickened and darkened.
- Serve with steamed rice and top with fresh coriander leaves.
Tip: The longer you cook it, the more the sauce reduces and the flavour intensifies — this is a dish that rewards patience.
