Ingredients
- 30g The Spice Factory Butter Chicken Spice Mix
- 700g chicken thigh fillets, chopped
- 125mL natural yoghurt
- 1 tablespoon lemon juice
- 60g butter
- 1 tablespoon sunflower oil
- 1 onion, finely chopped
- 425g can tomato puree
- 150mL chicken stock
- 250mL thickened cream
Method
- Combine yoghurt, lemon juice, and spice mix. Add chicken, mix well, cover and refrigerate overnight (or at least 2 hours).
- Heat butter and oil in a pan over medium heat. Add onion and cook for 2 minutes.
- Reduce heat to low. Add chicken and marinade, tomato puree, and chicken stock.
- Simmer for 10 minutes. Stir in cream and cook for a further 10 minutes.
- Serve with steamed basmati rice and warm naan.
