Simply sprinkle on before or after cooking (use approx 1/2 tsp. per piece of meat)

Ingredients: Sugar, Salt, Paprika, Bread Crumbs, Maltodextorin, Spices, Oleoresin, Flavour Enhancer. Warning: This product contains Gluten. This product may contain traces of nuts.

Makes: 4 servings


  • 1/2 pork butt or whole scotch fillet (approx 2-3kg)
  • 70g The Spice Factory! Texan BBQ Rub
  • 1 Tablespoon lemon juice
  • 1/4 cup orange juice
Mop (Optional)
  • 1 cup apple cider vinegar
  • 1/2 bottle beer


  1. Mix The Spice Factory! Texan BBQ Rub, lemon juice, and orange juice into a paste.
  2. Rub the paste over the pork and wrap in plastic wrap, marinate overnight.
  3. Mix apple cider vinegar and beer to make mop
  4. Preheat smoker or oven to 95-105 degrees C. Allow pork to come to room temperature prior to cooking.
  5. Smoke or cook for 4 hours (mop every 45 min) until internal temperature is 65 degrees C
  6. Wrap pork tightly in butchers paper or foil and finish in smoker or oven for 1-2 hours or until very tender (~100 degrees C)
  7. Rest for 15 minutes then pull/shred the pork.
