RENDANG BEEF CURRY
Serves: 4
Ingredients:
- 1 kg gravy beef or chuck steak cut in small pieces
- 1 onion coarsely chopped
- 4 garlic cloves coarsely chopped
- 2 red chillies chopped
- 2 * 400 mL cans coconut milk
- 40 gr desiccated coconut
- 1 stem lemon grass, bruised.
- 1/3rd cup coriander leaves
- 30 gr spice it up! Rendang curry spice mix
Preparation:
1) Place beef in large saucepan add all ingredients except for coriander leaves and bring to boil.
2) Simmer for +/- 2 hours or until tender.
3) Serve with rice and top with fresh coriander leaves
