Signature Recipe: Thai Green Chicken Curry

Ingredients
- 30g The Spice Factory Thai Green Curry Spice Mix
- 1kg chicken thigh fillets, cut into small pieces
- 1 tablespoon oil
- 100mL chicken stock
- 140mL coconut milk
- 2 tablespoons fish sauce
- 1–2 tablespoons brown sugar
- ⅓ cup fresh basil leaves, roughly chopped
Method
- Heat oil in a frying pan over high heat. Add chicken and fry until golden.
- Reduce heat and add the Thai Green Curry Spice Mix. Stir until aromatic.
- Add chicken stock and stir to combine.
- Add fish sauce, brown sugar, and coconut milk. Stir through and simmer for 15 minutes.
- Stir in fresh basil and serve with steamed jasmine rice.
